I'm not going to lie and try to convince you that I stuck to my Healthy Eating Challenge all last week.
You may call me a glutton, and indeed there is a photo of me cosying up to a block of cheese larger than my head which would certainly indicate that I am.
But I am not a liar.
I started off last week by adhering quite closely to the week one food plan I printed off here. But when a last-minute opportunity for a get-away with Rob presented itself, I seized the day.
And the cheese.
The week was not a total write-off however. Here are a few things I learned:
A lot of moms, especially those like me who are not milk drinkers, have problems getting sufficient calcium and the fat content in cheese, much as I love it, means it's not the greatest substitute. The eating plan included this yummy frozen yogurt which is so low in fat I have been able to enjoy it guilt-free and feel good about my calcium intake.
Also, this Shepherd's Pie is awesome. We had it for dinner last Tuesday night. I popped it in the oven, spent an hour playing blocks and colouring with Graham and the end result was a meal that tasted every bit as good as if I had cooked it from scratch. I do make a mean homemade version, but it's a lot of work for a dish that isn't exactly something that will wow dinner guests or set the stage for a fabulous evening.
Ergo, I can't see myself ever bothering again. So there.
I'm gonna try and stick to my eating plan a little more closely this week. Summer seems to have arrived quite abruptly and while it's welcome, I'm not quite ready to show off my winter body just yet.
Wish me luck on eating healthy this week and using my extra time to finally start working out in the evenings.
Does anyone know how long I have to spend on the stair-master to work off nine and a half pounds of cheese?

I fully support you opinion on that PC Shepard's Pie - it rocks! And makes my life easier when I'm too lazy to cook (which is pretty much every day).

I'm pretty sure it's only like 5 minutes on the stair master.......At least, that's what I'd tell myself. If I was actually going to work out. haha.

I tried the Shepherd's Pie and it was not my favourite. Maybe it was the fault of my gas oven but I thought it tasted like a delicious dish for a cat.
I do love the frozen yogurt.
