Yes, Irish Cream. It's fattening. It's super sweet. And it tastes damn good in just about anything. There is nary a time when someone offers me a shot of Bailey's in my coffee that I can say no.
One of my best Baileys experiences was at The Pottery restaurant at Blue Mountain Inn in Collingwood, Ontario. (I'm telling you because should you find yourself there, you HAVE to try this.) They make a Bailey's cheesecake that is wrapped in Phyllo pastry and has a Jack Daniels caramel sauce on top. You don't understand how good this is!
So when my friend Sarah (who also happens to be the PR person who reps Bailey's) sent me a slew of recipes for Bailey's cocktails, well really? What would you have done? Does one keep it to themselves, or does one share it with her bloggy friends?
Recipes below. If you have a fave Bailey's mixer that you'd like to share, leave it for me in the comments.
Baileys Adult Chai Latte
1 oz. Baileys Original Irish Cream
¾ oz. Green Tea Syrup
¾ oz. Milk
Blend in a blender with 1/3 shaker of ice cubes. Serve in a highball glass garnished with a sprinkle of cinnamon. (This one sounded good, but Green Tea Syrup? Where does one find this? I am pretty resourceful, but it seemed like a lot of effort. So I just omitted the GTS and had Baileys with milk. Not fancy, but *droooool*. Plus I got some calcium right?)
Baileys Real Hot Chocolate
1 oz. Baileys Original Irish Cream
1½ oz. chocolate milk
3 dashes of Chipotle Tabasco
Mix all ingredients together and serve in a porcelain mug. (I tried this and it was way better with hot chocolate than chocolate milk.)
Baileys Tartuffo
1.5 oz. Baileys Original Irish Cream
¼ oz. Smirnoff Raspberry
¼ oz. Smirnoff Vanilla
Shake ingredients over ice and serve chilled in a martini
glass. (Easy and YUMMM!)
Baileys Florida Frost
1 ¾ oz. Baileys with a Hint of Mint Chocolate
¼ oz. Smirnoff Orange
Shake ingredients over ice and serve chilled in a martini
glass garnished with an orange rind. (This reminded me of my great kitchen hand soap that I must write about here!)
Baileys Your Place
1 oz. Baileys with a Hint of Mint Chocolate
1 oz. coffee
½ oz. chocolate syrup
Mix all ingredients together and serve on ice in a rock
glass. (Coffee, chocolate, Baileys. Really what are you waiting for? Go make this right now. Ordinary Baileys is good in this recipe too. Because there is coffee. And chocolate. And alcohol. All in ONE drink! Frankly, I just eyeballed this and made myself a big mug and skipped the ice. But that may be because I was drunk at this point of the trials.)
Baileys My Place
1 oz. Baileys Original Irish Cream
1 oz. coffee
½ oz vanilla syrup
Mix all ingredients together and serve on ice in a rock glass.
(Um... I have no recollection of this one. I think I may have been drinking straight out of the bottle at this point.)

Okay that cheesecake sounds like the best thing EVER!
