And I love it when my two hours of prep and the enthusiasm of my dinner guests culminates in a dish that sucks serious donkey balls.
I love it when friends and family come for dinner, and I love it when they entertain my children so that I can have a full couple of hours for real food prep time. I love putting food on the table and having people compliment me on my mad kitchen skillz.
Grr.
Honestly, how can this recipe turn out so very wrong? I had even watched the episode, which had inspired me to make the dish. And yet, the result? Bland, wet, kind of raw, and totally inedible. Ok, not totally inedible, but certainly not worth the calories.
Grr.
Partly it was the fault of my stupid ass oven, which has not been able to hold its temperature and has been in need of a repairman for a while now. Partly it was fault of the cook, for subbing 2% milk when the recipe called for cream, and probably not having quite enough cheese for the dish, since I used 12 freakin’ potatoes! That’s right; I intentionally scrubbed, peeled and grated 12 potatoes, so that I would intentionally have a HUGE final dish so that I would intentionally have leftovers for lunches the next day. And then I intentionally threw it all into the compost bin because it sucked serious donkey balls.
Grr.
Next time I’m going to be smart about it. Next time family members offer to entertain my kids for two hours, I’m taking a nap.
Grr.

Don’t be put off of regular potatoes because of their high carbohydrate content. You need carbs, dude, and it’s better if they come from whole foods and veggies – like potatoes. You’ll also be getting lots of potassium, vitamin C, fibre and folacin, so eat your spuds. Go here for some great recipes that won't end up in the compost bin.

That sucks. On the bright side, I did try the chicken broccoli loaf and it was yummy! I had to give up on the braiding part though.
Remind me to give you my mom's recipe for Whipped Potato Bake. You'll love it.
